Nuoc Cham: Vietnamese Dipping Sauce

This is a dipping sauce or condiment that is a staple in all Vietnamese kitchens. You can make a large quantity and keep in a bowl or jar for a month in the fridge. It has the delicious combination of salty, sweet and sour all in one. Usually put over rice, vermicelli or grilled meats to make it a taste sensation. This recipe works on a 1:1:5 basis of Fish sauce, Sugar and Water.

Ingredients

  • Fish Sauce (5 Tb)

  • Water (25 Tb)

  • Sugar (5 Tb)

  • Garlic (2 cloves finely sliced)

  • Chilli (1 small chilli finely sliced)

  • Lemon (1)

Preparation

  1. Squeeze juice from the lemon and combine all other ingredients in a jar or bowl and stir until sugar is dissolved.

  2. Can store in a jar or bowl in the fridge for up to a month.
