This is an awesome soup for when you feel like you need to be nourished with wholesome food and or warmed up over the colder months. It is really hearty, satisfying and will make you happy the instant you smell it cooking. Feel free to swap out the Chorizo for salami or kransky sausages. Serve with some delicious bread and a glass of red wine for pure winter indulgence This recipe serves about 6 people. The inspiration for this recipe comes from Anabel Langbein.

Ingredients
Olive Oil (2Tbsp)
Onion (1) finely diced
Carrot (1) peeled and finely chopped
Celery (2 sticks) finely chopped
Tomato Paste (¼ cup)
Garlic (2 cloves) diced
Smoked Paprika (4 tsp)
Curry Powder (2 tsp)
Chorizo sausage (150g)
Chicken Stock (2 ½ litres)
Canned Tomatoes (2 x 400g)
Dried Brown Lentils (2 cups) washed
Bay Leaves (2)
Salt and Pepper (to taste)
Lemon juice (1 Tbsp)
Coriander (fresh and roughly chopped)
Method
Finely dice the onion and carrot. Heat oil in a large pot and gently fry onion and carrot until soft.
Turn the heat up slightly and add the tomato paste, garlic, paprika, curry powder and diced sausage for 1 minute
Add the chicken stock, tomatoes, celery, lentils and bay leaves. Turn the heat down and simmer gently until the lentils become very soft (This will take between 1- 11/2 hours).
Season to taste and just before serving mix in the lemon juice and coriander. Enjoy
