Fresh Wasabi and Soy Salad

Don't let the Wasabi put you off this fantastically fresh salad. As the days begin to get longer and the produce keeps getting better, this quick salad can be thrown together in a flash. Serve with the protein of your desires, either mixed through or serve on the side and before you know it you have created an unbelievably amazing meal. You can also serve alongside some white or brown rice. This salad makes enough for about 4 people.



Ingredients

  • Cabbage (2 Cups, Sliced thinly)

  • Carrot (2 Cups, julienne or grated)

  • Tomato (1, diced)

  • Red Onion ( ½, diced)

  • Cucumber (1/2 telegraph, diced)

  • Spring onions (2, Thinly sliced)

  • Nori, seaweed sheet (Optional, 1, cut into small squares)

  • Avocado (Optional, 1, diced)

Dressing

  • Sesame Oil (1 tsp)

  • Soy Sauce (4 Tbsp)

  • Rice Wine Vinegar (3 Tbsp)

  • Wasabi Paste (1 ½ tsp)

  • Sugar (1 Tbsp)

  • Sesame Seeds (3 tsp)

Method

  1. Mix all dressing ingredients in a bowl and set aside.

  2. Slice your cabbage as thinly as possible into a bowl.

  3. Julienne or grate carrots and place into the same bowl.

  4. Dice tomatoes, red onions and avocados if using.

  5. Using kitchen scissors or a sharp knife, cut Nori into small squares.

  6. Mix dressing in with the salad ingredients and mix well.
