Everyone knows how good Fried Chicken is, it seems like every restaurant, cafe and food truck are serving these delightful morsels. It is only recently that I have looked into making this goodness at home. These are surprisingly easy and amazingly delicious. Give these a go, they made me instantly happy and wishing that I had cooked a few more. If you want the chicken to be extra extra crispy give them a double fry.The inspiration for this recipe comes courtesy of Rasa Malaysia.

Ingredients
Chicken nibbles, wings or small drumsticks (500 - 600g)
Potato Starch (½ Cup)
Salt (½ tsp)
Black Pepper (½ tsp)
Oil (For frying)
White Sesame Seeds (For garnishing)
Dressing
Korean gojuchang red pepper paste (2-3 Tbsp)
Apple Cider Vinegar (1 Tbsp)
Hot Water (1 Tbsp)
Honey (2 Tbsp)
Soy Sauce (1 Tbsp)
If you don’t have Korean gojuchang red pepper paste you can mix 2 tsps of red chilli flakes with 2 Tbsps of soy sauce and ½ tsp of sugar. It will not give you 100% of the taste but a worthy substitute. You can get Korean gojuchang red pepper paste from most asian food stores.
Method
Season chicken with the salt and black pepper.
Coat with the potato starch and set aside.
Mix all dressing ingredients together and set aside.
Heat a dutch oven, skillet, wok, skillet or pan with 5-8 cm of oil. There needs to be enough oil to cover the chicken.
Heat the oil to about 190 degrees.
Shake of excess potato starch and gently place the chicken in to the oil. Do not overcrowd the pan as this will lower the oil temperature.
Fry until golden brown and crispy.
Once cooked, removed the chicken from the oil and place on paper towel to drain excess oil.
Once all the chicken has been cooked coat the chicken with the dressing and garnish with sesame seeds. Serve and enjoy the happiness that this brings!
